1. Chop or use food processor to break down fish and mince. Place minced fish in mixing bowl.
2. Heat a tbsp or two of olive oil in skillet (I use cast iron) and add vegetables. Add a pinch of salt. Cook until very soft.
3. When done, drain and add vegetables to fish in mixing bowl.
5. Form mixture into six patties and refrigerate 30 minutes to set up.
6. Fry cakes until thoroughly cooked and golden brown, approximately 6 minutes per side. Serve over spaghetti.
