Sriracha-geddon - Que Sriracha Cha
Could the end be near? In 2013, the residents of Irwindale, California, began to complain about a pungently spicy smell coming from the factory of Huy Fong Foods, the sole maker of Sriracha hot sauce. The city quickly reacted, filing suit against the company, stalling production, and imposing stricter guidelines upon the company. Yesterday it was announced the lawsuit will be broadened to include a breach of contract claim and the case will go to trial in the fall.
As in any crisis, the dedicated home chef should prepare. And by "prepare", I mean adapt, seek out alternatives, and if necessary, cook your own. After perusing many articles, I settled on this quick and easy version, which can be prepared in about 25 minutes.
As I chopped the vibrant red peppers, I sampled a little raw piece of the Red Fresno peppers. The peppers had a spicy but not over the top flavor, well rounded with the familiar Sriracha bite.
As I cooked the peppers, they turned from red to a surprising vibrant orange. I added water during the simmering process which seemed to help the cooking and consistency and I found that using a blender for the last stage incorporated much more of the body of the peppers; the food processor just didn’t seem to do a thorough job.
Finally, after straining, I tasted the sauce. I had hoped for a close imitation of Sriracha, however, I have to admit I was surprised by the intensity, flavor, and bite of sauce, which included the similar Sriracha taste, but the freshness and brightness of which outshone the half-used bottled Sriracha on my fridge door. I am wild about this fresh version - it might even be better than the original. Who would have guessed?
As I jarred the spoils, I looked forward to having an interesting condiment for Super Bowl on Sunday. The red rooster on the bottle is the Chinese astrological sign of the brand’s creator, David Tran.
As an homage to Pennsylvania, I made a sketch to add to my labels of the state bird, the ruffled grouse.
