Otherwise known as Polenta with Sausage, the deep, rich depth of flavor of this dish is drawn from the sauce created by sauteing the fresh pork sausage in garlic, rosemary, cracked black pepper and dry white wine.
As always, I subscribe to the theory of using the freshest ingredients available and my meats are no different. Fresh pork sausage is a must here.
So too do I believe the polenta must be made from scratch. No instant or pre-made polenta for me. Sure, it's tedious work, but you'll taste the difference in the end result. For that reason, I've included the recipe for Basic Polenta.
