- In a lightly oiled pan over medium high heat, sear salmon filets approximately 3-4 minutes per side. Transfer them to moderate oven to finish cooking.
- Meanwhile, melt butter in a skillet and stir in flour, continuously until it begins to thicken. At that point add lemon juice and wine, and blend well.
- Add parsley, ground pepper to taste and capers. Let cook down and thicken. Remove from heat.
- Remove salmon from oven, sprinkle with salt and pepper and drizzle with lemon caper sauce, Garnish with toasted onion.
