This recipe pairs this hearty pasta with the bright notes of Extra Virgin Olive Oil and the earthy goodness and amazing texture of seared asparagus. Easy to prepare, when coupled with your favorite wine, it makes any ordinary night feel special.
4. When the asparagus has cooled, cut into 3/4" to 1" slices and set aside.
5. Bring the water you cooked the asparagus in to a rolling boil and add Cavatelli. I like to do this so the pasta absorbs the essence of the asparagus while cooking. Cook for 7 minutes.
8. Cook quickly, until a lightly-charred sear begins on asparagus and remove from heat.
10. Add seared asparagus to pasta and mix thoroughly. Serve immediately.
