This Recaito Pork & Broccoli Rabe Sandwich is a delicious hybrid of Latin and Italian cuisine. It combines succulent, tender pork slow-cooked with the aromatic and zesty flavor of my own Recaito (Green Sofrito) with broccoli rabe sauteed to savory perfection in garlic and olive oil. Topped with a slice or two of provolone and resting upon a crusty artisan roll, it is the perfect remedy for the "same old, same old". So whether it's "mangia" or "comer" makes little difference as long as you enjoy!
This is one of those sandwiches I concocted from my want (wont?) of basking in the guilty pleasures of a good old B.L.T. and my desire to maintain a healthier eating regimen.
I've learned that eating healthier is not simply replacing one ingredient with one of a healthier aspect. Sure, that works for a while, but gets boring and dull in the long-term, and eventually, abandoned altogether. For me, it's making a few sacrifices here and there, and for anything I deduct, I try to add another element that raises the whole.
I tinkered with this sandwich and think I've found the perfect blend of texture, crunch, taste and comfort without the jam-packed fat of the old-fashioned, mayo-slathered, pork-poppin' B.L.T.
Try it. I think you'll agree it's a winner.
