I love a good one-pot meal. This is one that is sure to delight whether it is simply a weeknight meal for two, a weekend get together with a group of friends, or even, to whip up for company who's headed your way on short notice. It also stretches well if you find yourself with more dinner guests than expected.
This Vodka Sauce Chicken medley makes for a colorful presentation, and the rich flavor comes across as real comfort food. It also an easy dish to prepare which I feel is should be a prerequisite for a one-pot meal.
1 lb skinless & boneless chicken thighs
8 oz fresh peas
8 oz mushrooms, sliced
1/2 medium sweet onion, sliced
3 cloves garlic, minced
1/4 cup fresh Italian parsley, chopped
1/4 tsp garlic powder
1/4 tsp marjoram
2 tbsp Olive Oil
24 oz of your favorite Vodka Sauce, store bought or home-made
1/4 cup Parmesan cheese, grated
Sea Salt, to taste
Black Pepper, to taste
Peel and mince 3 cloves. Slice 1/2 onion into narrow ribbons.
Using an oven-safe pot, put on stove top at medium heat.
Heat olive oil in pot and saute onions and garlic. The goal here is to soften the onions and slightly brown the garlic. Add a pinch of sea salt and a couple of turns of the pepper mill,
While sauteing onions and garlic, preheat the oven to 350 degrees and cut up the chicken thighs into pieces
approximately 1/2" wide.
When the onions and garlic begin to brown (as in photo at above right), add cut up chicken thighs to pot.
Another pinch of salt and a turn of the pepper mill. (I like to layer my spices in small amounts)
