Ingredients
    •    2 lbs whitefish, cod, haddock or catfish
    •    3 tbsp unsalted butter
    •    1 yellow onion, roughly chopped
    •    1/3 cup heavy cream
    •    1-1/2 cups dry bread crumbs
    •    2 tbsp mayonnaise  
    •    1-1/2 tsp ground mustard
    •    1 tsp dried parsley flakes
    •    1/2 tsp Old Bay Seasoning
    •    1/2 tsp Tabasco Pepper Sauce
    •    1 egg, beaten
    •    1 tsp salt
    •    1/2 tsp ground black pepper
    •    Canola oil
    •    1/2 cup stone ground white cornmeal
Preparation:
  1. Heat 3 tbsp butter in a large skillet over medium heat.
  2. Add onions and cook until soft; 3-4 minutes.
  3. Add fish and cream and bring to a boil over medium-high heat. Season with a pinch of salt and freshly-ground black pepper and cook covered for approximately 10-12 minutes or until fish is cooked through. Allow mixture cool for 15 minutes.
  4. When cooled, transfer mixture to a large bowl, removing any excess liquid. Flake with with a fork.
  5. Add bread crumbs, mayonnaise, ground mustard, parsley flakes, Tabasco, Old Bay seasoning, eggs, and salt and pepper. Fold mixture together until well combined.
  6. Shape fish cake mixture into approximately 8 to 10 3/4"-thick patties.
  7. Gently dredge each patty in cornmeal and set on sheet pan to set in refrigerator for 30 minutes.
  8. Preheat oven to 400º.
  9. Heat a couple tbsp of canola oil in large cast iron skillet over medium heat. Add 3 or 4 patties to the skillet and cook each side until lightly browned; approximately 3 minutes per side. Place browned fish cakes on greased sheet pan. Repeat until each fish cake is cooked in this manner.
  10. Place fish cakes in preheated 400º oven and cook for 5-7 minutes.
Serve with Tartar sauce and lemon.

Fettucini Alfredo with Prosciutto & Asparagus

Ingredients:
  • 8 ounces thinly-sliced prosciutto
  • 4 tablespoons butter
  • 1 small red onion, chopped
  • 1 tbsp minced garlic
  • Salt and freshly ground pepper
  • 1-1/2 cups heavy cream
  • 1 lb fettucini
  • 1 bunch asparagus
  • 1 cup Parmesan cheese
Preparation:
  1. Rinse asparagus and trim off the thickest portion of each stalk.
  2. Mince approximately 1/3 of the prosciutto. Slice the remaining amount into 1/4" strips that mimics the fettucini.
  3. Melt butter in a large skillet over medium-low heat. Add chopped red onion and a pinch of salt and freshly-ground black pepper. Cook until softened, approximately 2 minutes.
  4. Stir in cream and minced prosciutto, bringing to simmer. Continue to cook, stirring occasionally, about 5 to 7 minutes. Remove from heat and cover to keep warm.
  5. Blanch asparagus until they are a bright green in color. Drain and cut into 1-inch sections.
  6. Meanwhile, bring 4 quarts water to boil in large pot and add pasta, as well as 2 tablespoons of salt. Cook, stirring often, until al dente.
  7. Reserve 1 cup of pasta water. Drain pasta and return to pot.
  8. Add reserved cooking water, cream mixture, prosciutto strips, asparagus sections, Romano cheese and 1 teaspoon freshly-ground black pepper to pasta. Gently toss until pasta is well coated.
  9. Transfer pasta to serving bowl and serve immediately.

Ingredients:
  • 5-6 boneless chicken thighs
  • 2 tbsp canola oil
  • 4 tbsp butter
  • 1/2 tbsp salt, plus extra
  • 1 tsp black pepper, plus extra
  • 1/2 tsp garlic powder
  • 4 cloves garlic, chopped
  • 1/4 tsp cayenne pepper
  • 2 yellow onions, sliced
  • 1 lb. mushrooms, sliced
  • flour
  • 1/2 cup white white
Preparation:
  1. Add canola oil to large skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper and dredge in 1/2 cup of flour. Add to skillet and brown each side (just brown; do not cook all the way through!) Remove chicken from skillet and set aside.
  3. Drain skillet and add 4 tbsp of butter to skillet over medium-low heat.
  4. Once butter melts, add 4 cloves of chopped garlic to pan and allow to soften slightly.
  5. Add 1 lb. sliced mushrooms and 2 thinly-sliced yellow onions to skillet, and mix thoroughly; coating with butter.
  6. Season onion/mushroom mix with 1/2 tbsp salt, 1 tsp black pepper, 1/2 tsp garlic powder and 1/4 tsp cayenne pepper. Cook until tender, about 5 minutes.
  7. Add 1/2 cup white wine and de-glaze pan beneath onions and mushrooms, scraping the browned bits (fond) from the bottom of the skillet (the Fond is where all the flavor is!). Continue to cook another 5 minutes.
  8. Reintroduce the chicken thighs into onion/mushroom/wine mix in the skillet. When it begins to boil, reduce heat to low, cover and continue to cook an additional 35-40 minutes.
  9. Remove from heat and serve atop rice or quinoa.

Ingredients:
  • 2-3 tbsp canola oil
  • 4 to 4-1/2 lb pork shoulder roast (preferably boneless)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup apple cider vinegar
  • 1 cup ketchup
  • 1/2 cup molasses
  • 1/3 cup brown sugar, packed
  • 1 tbsp Worcestershire Sauce
  • 1 tsp ground mustard
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 tsp red pepper flakes
Preparation:
  1. Heat oil in deep pot over medium-high heat. Brown pork on all sides, approximately 12 minutes.
  2. Remove pork and transfer to slow cooker.
  3. Add onion to the remaining fat in the pot and cook until browned, approximately 5-7 minutes. Add minced garlic and cook another minute.
  4. De-glaze with apple cider vinegar, scraping the browned bits (the "fond") from the bottom of the pot. Cook for an additional couple of minutes.
  5. Stir in the ketchup, molasses, Worcestershire sauce, brown sugar, mustard, garlic powder, paprika, cayenne pepper, salt and black pepper.
  6. Cook until mixture begins to bubble then pour over pork in slow cooker.
  7. Cook on low for 8-10 hours, until pork is very tender and pulls apart easily with a fork.
  8. When done, remove from slow-cooker and place on cutting board. Remove and discard any fat and shred pork.
  9. Skim excess fat from top of sauce. Return shredded pork to remaining sauce.
  10. Serve atop your favorite buns with a side of homemade coleslaw.
