- In a large bowl, combine ricotta cheese, powdered sugar, vanilla extract and chocolate chips.
- Carefully spoon filling into one end of a resealable plastic storage bag and snip a small hole in the end containing filling.
- To fill shells, pipe filling from the center of the shell out to each end.
- Dip ends of cannoli in remaining mini chocolate chips, and dust with additional powdered sugar for garnish if desired.
