This light, sweet and creamy no-cook soup can be made ahead of time, and is fabulous as a first course or a light dessert. For a Thai twist, replace milk with coconut milk and basil with Thai basil.
- In a blender, combine all ingredients and blend until smooth.
- Cover tightly and chill for 2 hours.
- Serve chilled, garnish with remaining goat cheese and basil.
