Goulash (Hungarian: gulyás) is a soup or stew of meat, noodles and vegetables. From what I have seen over the years, it can be comprised of just about anything you wish to toss in the pot, as long as it has the base ingredients.
As I got older, my tastes have changed a good bit, to the point where I actually crave some of my mother's old standard dishes. Tonight, cool and damp; with the forecast calling for snow, seemed tailor-made for goulash.
Here's how I prepared it...
Hot. Top with Parmesan cheese if desired.
This is another meal that can be easily modified to suit what you have on hand and the ingredients you enjoy.
Carrots? Sure - why not?
Spaghetti instead of egg noodles? Why, of course!
Toss in some bay leaves, some cayenne pepper, a dash of paprika… experiment and see what you enjoy!
