It was another bachelor type evening. Cheri and the girls were away, and there I was, responsible for feeding myself. Luckily, the garden was in full swing. The chickens were laying, and there was some left over pork, in the form of the oft-maligned Spam, in the fridge.
So I was off and running... er, cooking.
I put the potatoes, garlic and peppers in first, and let them cook for five minutes or so.
Then I added the onion. A sprinkle each of salt and pepper, and I let that concoction simmer while I diced the Spam.
When the potatoes were soft, I pushed them aside and cracked the two eggs into the skillet, scrambling them about as the cooked and added them into the mix.
I dropped the Spam in and browned it, then stirred the whole contents of the pan together.
Nothing fancy. Nothing expensive. Just delicious, home style fare.
